Have your winner of the contest sit next to your table back to back to Phil.

When Phil goes to the rest room, just as he sits down the winner will place some brown stuff on his chair. Then ask the waiter to move to another table and you work your magic and get Phil to parade the brown spot around. Best if you can get Phil in a white suit.
